Rose Falooda

Summers are here! With weather this hot, nothing else sounds so refreshing than a glass of creamy falooda. It has seriously never felt more like summer.




Falooda is a popular sweet and cold drink. It is made up of many ingredients such as rose syrup, vermicelli, basil seeds, jelly, fruits, nuts along with milk, ice-cream or kulfi. Traditionally, falooda is flavored with rose syrup, but it may be substituted with other flavors like saffron, mango or strawberry. It can be served either with ice-cream or kulfi. It's upto your choice.


So, here's the recipe for this creamy and delicious Rose Falooda. Do try it out.


Ingredients:

Milk - 1 litre Rose essence - 1/4th tsp Condensed Milk - 6 tbsp

Sugar - 4 tbsp (or according to your preference because we will be using icecream as well at the end)

Red food colour - a drop

Corn flour - 2 tsp

water - 3 tsp Basil seeds / Sabja / Tukmaria - 1 cup Falooda noodles - a handful Almond - 10 in no's

Strawberry jelly - 1 piece per glass ( optional)

Rose syrup/ rooh afza - 1 tbsp per glass Vanilla ice-cream - 1 scoops (per glass)

Rose petals - for garnish (optional)

Preparation:

1. In a pan add in the milk, rose essence, sugar, condensed milk, and red food colour. Bring it to boil.

2. Now in a small bowl add in the corn flour and water and make a runny paste. Gradually add this corn flour and water paste to boiling milk and keep stirring ( we don't want any lumps in it) let it thicken a little. Turn off the heat and let it cool completely. Refrigerate it later.

3. Meanwhile,Soak the basil seeds in 1 cup water for 1 hour or until they have plumped up.

4. Cook the noodles in 3 cups of water until soft or as per the instructions in the packet. Drain and refrigerate. 5. Chop the almonds into small pieces and set aside.

To assemble the falooda:

1. Take two tall glasses and put some jelly pieces and 2 tbsp of roohafza in each glass.

2. Add noodles as your preference. Now, pour some chilled rose milk prepared.

3. Top it with 2 tbsp of basil seeds/ sabja and chopped almonds.

4. Add 2 scoops of vanilla ice cream. Garnish with chopped almonds and rose petals. You'r rose falooda is ready to serve.
